More baking



Today I made Oatie Cake things. After my last post Donk sent me his trail snacks recipe. They are yummy, I think they win over flapjacks. Made this morning, took two to work, came home Ali had found them not many left now!

    Oat biscuits6oz / 150g margarine6oz / 150g plain flour6oz / 150g Demerara (brown) sugar2 tablespoons Golden Syrup½ tsp Bicarbonate of Soda8oz / 200g porridge oats (Approx, see below)Preheat the oven to 180 Celsius / 350 Fahrenheit / Gas Mk 4.Gently melt the margarine and golden syrup in a pan.Whilst this is melting, mix all the other ingredients in a large bowl and lightly grease 2 big baking trays.Mix the melted butter into the dry ingredients. This should produce a stiff mixture that will easily hold its shape when rolled into a ball. If not, add more oats to stiffen it up.Roll into balls about 1 to 1½ inches in diameter and place on the tray.Bake until LIGHLY browned. In our fan oven this takes exactly 8 minutes. It may take longer in standard ovens, but I can't see it being any more that 2-3 minutes more.(If they spread out too much, you need more oats next time) Optional Extras -Add 100g sultanas straight into the above recipe for a jucier biscuit!Substitute 50g of the sugar for 50g of mixed chopped nuts for a bit more crunch.
